Clay Fridge Magnets




Hi !!


Hope you all are doing well.... 

Today I am going to share with you my clay project... This has been on my mind for quite some time but was not getting to do it..:))

So this time  I tried no cooking cold porcelain clay recipe from youtube... On the surface clay looked okay & soft but when I mixed colours in it the clay started getting dried up quickly... So I made the designs first and then used acrylic colours to colour it...... Next time I think I will go with my old cooking recipe of clay making....This is how it looks









The base is wooden coaster which I have used to make magnets... Hope you will like it...

I also tried out a new healthy recipe of Bran Muffins.






Sorry, I didn't get a chance to click more fancy pics, as my kids got busy eating them.These are very delicious and yummy. Elements like wheat bran, oats, dry fruits make it a very healthy option for breakfast / snacks / dessert.

Banana Blueberry Oats Muffins




Hi  !!!

Today I am going to share  another  healthy recipe of muffins  with oats, banana & blueberry which I tried few days back.  I came across this recipe in youtube "Baking with Nadia" and by the end of the video tutorial I just had to try out this recipe. 

You can assemble the entire dish with very few ingredients & can give it to your kids without feeling guilty.





To make these you will need following ingredients :


Bananas - 3 nos. mashed
Oats powder- 2.5 cups(churn the oats in the processor for a min or two)
Yoghurt - 1 cup
Walnut - 1 cup finely chopped
Flax seeds - 1-2 tsp
Powdered sugar - 1/2 - 1 cup depending upon the sweetness you desire (optional)
Eggs - 3 nos
Baking Powder - 1.5 tsp
Baking Soda - 1/2 tsp
Blueberries frozen - 1 bowl
Cinnamon powder  - (optional)




Method


Pre heat your oven at 200 deg C

Beat the eggs well and mix it with mashed bananas. Then add the sugar and give it a thorough mix. Keep it aside. Now mix the dry ingredients ie oats, chopped walnuts, baking soda, baking powder and flax seeds. Now bring the dry and the wet ingredients together and mix it properly. Now add the frozen blueberries and a dash of cinnamon to give it a nice flavour.

Transfer the batter to already greased muffin moulds and bake it for 20-25 min.








Mine took 30 min to cook and this is how it looks. The recipe doesn't demand this but I topped the muffins with choco chips before baking it so as  to make it more alluring for the kids.

Cornmeal Muffins (eggless)



Hi !!!



Hope all of you are enjoying your weekend.

Here in Delhi its very hot. I  don't feel like going out until & unless its very important & urgent. I have been planning to watch a movie for sometime now, but due to this scorching heat I dropped the idea and decided to laze around at home, watching Tv and doing the regular household chores.

I was just rummaging  through my grocery stock for some kitchen items, and surprisingly I found this packet of cornmeal which I had bought during winters and which I had totally forgotten about. Impromptu,  I decided to make something sweet out of it. Little bit of net surfing &I came across this super easy muffin recipe shared by nisha madhulika in youtube.

Her recipes are quite simple and very easy to follow. So I tried out this muffin recipe & as you can see,  it came out quite soft and delicious.








These eggless recipes come in quite handy .... when you ran out of eggs or especially on  days like mon, tues & thurs when I don't eat eggs/non veg & on my kids insistence I need to prepare baked items. 

Now coming to the muffins you will need the following elements:


Ingredients

Cornmeal - 1/2 cup
All purpose flour - 1/2 cup
Powdered sugar - 1/2 cup
Baking powder - 3/4 tsp
Baking soda - 1/4 tsp
Curd - 1/2 cup in room temp.
Butter - 1/4 cup
Vanilla essence - 1/2 - 1 tsp


Method

Pre-heat your oven at 180 deg C

First of all we need to mix  the wet ingredients ie butter & curd together and whisk it properly. In a separate bowl we will mix the dry stuff ie the cornmeal, flour, sugar, baking soda & baking powder. After this we will bring both these mixtures together and mix them properly. In the end add vanilla essence accordingly. You can also add nuts to give it more crunch.

Now grease your muffin moulds with butter / oil and transfer the batter. According to the recipe we need to bake them for 10-15 min. , but mine took a bit longer...... around 20-25 min. Just check it with a toothpick, if it comes out clean then its ready otherwise you need to give it some more time.

Take them out of the oven and bring it to room temp. before de-moulding it.

TA.. DA your muffins are ready ......

Pepper Chicken

Hi !!!

This is a very simple recipe which I learnt from one of my friends. The best thing about this recipe is its quick and doesn't require elaborate preparation.




Ingredients

Boneless chicken : 400 gms
Curd : enough to do the marination
Pepper - 2-3 tbl spoon
Salt : according to taste
Coconut milk : little more than 1/2 cup
Bay leaf  : 1-2
Cinnamon stick -1-2
Garlic : 2-3 teaspoon (finely chopped)
Green chillies : 2-3 finely chopped

Method 

Marinate the chicken with curd, pepper and salt and keep aside for 30-40 mins. Heat oil in a pan and add little bit of butter in it. Now add bay leaves, cinnamon sticks, green chillies and garlic. Saute for a while and add the marinated chicken. Mix well and let it simmer until the chicken is cooked completely. Now add the coconut milk and cook for few more minutes. Garnish with coriander leaves. This dish goes well with lacha/plain paranthas.

Banana Bread




Hi !!!!!


I got this recipe from the book Tupperware cooks. This has been on my wish list for a long time and finally I managed to make it yesterday. Banana bread as the name suggests is a very healthy and wholesome snack and can be experimented with  by adding any type of nuts/seeds/fruits to the batter.









Ingredients


Refined flour - 330 gms
Medium sized banana - 4-5 pureed
Powdered sugar - 400gms 
Cornflour - 8 gms
Cinnamon powder - 2 tsp
Baking powder - 1 tbsp
Eggs - 5
Oil - 400 ml

Preheat the oven at 180 C

Method

Whip together banana puree, oil , eggs and sugar till creamy. Then fold in the refined flour,cornflour,baking powder and cinnamon powder. Grease a large sized bread tin or a  cake mould and pour the batter. Bake it for 45 min or till it is cooked. Allow it to cool for a while and serve it warm .

Variation 

You can replace half of the quantity of the flour with wheat flour as I have done and add prunes/walnuts to the batter to make it more healthy. I didn't have it so I did not use it in this recipe.

In case you want to follow measuring cup measurements then you can use this chart

125 gms maida - 1 cup
100 gms powdered sugar - 1/2 cup+1tbsp
180 ml oil - 1 cup

Til ( sesame seed) Laddoo




Hello !!!


Today I am going to share with you the recipe of Til (sesame seed) laddoos. Sesame seeds, as you know is full of natural oils which is very good for health and my kids love this sweet very much. During winter I make these laddoo for them, but because of some reason or other, I have been postponing it for some time now. Finally, I managed to get all the ingredients together and made them yesterday.






Ingredients

Khoya/ Mawa (grated) - 400 gms
Sesame seeds / til  - 1 1/2 cups
Powdered Sugar - according to taste 
Semolina / suji - 1/4 cup
Raisins / Kishmish - for decoration
Pure ghee - 1-1/2 tbsp

Method

Firstly, lightly toast the sesame seeds in a pan. Keep aside. Now dry roast semolina on low heat till it becomes light brown. Keep aside. Now in a pan heat 1-1/2 tbsp ghee in a kadai and then add grated khoya to it. Stir it for a while on medium heat till it melts. Now add bhura (powdered sugar) and mix well. Stir it for few min. and add seasame seeds and semolina to the mixture. Mix it well for few more minutes and switch off the gas. 

Stir the  mixture till it cools down a bit and shape them into firm laddoos while it is still warm. 

Roll them on toasted til (sesame seeds ) and decorate with raisins.

Delicious laddoos are ready to eat.
