Delicious Raagi

Hello friends !!!!

Hope you guys are all doing well. Summer is at its full peak. Cool showers has also not helped to lower down the temperature. Hopefully, monsoon will arrive soon and we might get some relief from this scorching heat.

Today I am going to share with you a wonderful recipe made out of Raagi flour. Also called Finger Millet this has many health benefits. It contains natural iron and has generous amount of calcium. Consumption of  raagi not only helps in lowering cholesterol but  is also very good for diabetic patients.

I came across this recipe in one of my very old recipe note book, lying hidden between the heavy books, in my book shelf. I was elated when I found this. Long forgotten recipes which I had jotted down from magazines,television........ When I noted it down, I forgot to write the name(maybe I was in a hurry), whatever. So I am not sure what should I call it. You can call this a cake, if you like, but it tasted more like a brownie to me.Even my kids confirmed it. So I am calling it Raagi Brownie

For this you need :

1 1/2 cups Raagi Flour
3 Large Eggs
1 cup powdered sugar
(I replaced this with equal portion of honey and dark chocolate)
3 tbsp Maida
120 gms butter/oil
1 1/2 tsp Baking Soda
1 tsp Lime juice
1/2 tsp vanilla essence
 a pinch of salt

Pre heat the oven at 180 C

Method

Mix raagi flour, maida and baking soda. Separate egg yolks and egg white. In another mixing bowl mix butter and sugar thoroughly. Add egg yolks, lime juice and salt. Now add the dry ingredients (flour mixture) to this and mix properly. Now beat the egg whites separately till you get peaks and add slowly to the prepared mixture. Pour this in a greased pan and bake it for 40 min or till done. Serve this with vanilla ice-cream. It tastes awesome!!!!

I enjoyed making this because not only it is healthy but it also turned out to be very delicious. My kids loved it and I was happy that I was able to feed them a healthy dessert.

Do try this out and let me know how you liked it.

Please drop in with your comments and have a nice day.
